I’m not very good about working ahead of schedule. I never have been. In college and grad school, I always did my best the day before an assignment was due. Not much has changed! But I have learned that having 4 kids alone can throw you some curves balls, so it’s probably a good idea if I at least work a week ahead of schedule. Well I am trying.

Today’s recipe….the perfect summer salad. The perfect pot luck dish. The perfect make-ahead side dish. Vegan. Gluten free. All of the above.
This recipe has been in my family for years and I am not sure where it started, but my dad passed it on to me. Everyone loves it and it goes well with a variety of foods. I made this to other night to contribute to our Friday night dinner with friends. They brought ribs and I brought this is some potato salad.
I love love the tang from all the lime juice. Plus it has some of my favorite foods in it- black beans, avocado and cilantro! You can assemble the salad and make the dressing in a separate container, then toss it all together the morning of the day you want to serve it. I think it’s best when it has a few hours for the flavors to marry.
Although it’s great a day leftover too, it does look quite as fresh that’s why when serving it to company I prefer to toss it the same day it’s served (6-8 hours it still looks fresh).

- 3 cups black beans (2-15 ounce cans or boxes of beans), rinsed and drained
- 1 can (15 ounce) corn, rinsed and drained (can sub frozen or fresh too)
- 2 tomatoes, cored and chopped
- 2 small avocados, diced
- ½ jalapeño, diced
- ½ cup sliced green onions
- ⅔ cup cilantro, chopped
- ⅓ cup olive oil
- ½ cup fresh lime juice
- 2 garlic cloves, minced
- ½ teaspoon salt
- pinch of cayenne
- In a large bowl combine beans, corn, tomato, avocado, green onions and cilantro. In a another bowl combine dressing: olive oil, lime juice, garlic cloves, salt and cayenne. Whisk to combine and pour over bean salad, toss well to combine. This can be made in advance (5-6 hours is best).

I am not good at planning ahead for blog posts either. In fact I am usually wrapping up my current post just minutes before I post it. I’ve tried to change, but it’s not easy.
Love this salad! I’ve done variations , but I really want to try your version. Love that you use green onions (I usually use red).

I finally started planning an editorial calendar and it has helped some with this issue of last minute posts. I’m definitely not as on top of it as I should be though! I love the corn, black bean, avocado, tomato combo. Perfect summertime BBQ dish!

This recipe looks delicious. I will serve it with blue corn tortilla chips, pita bread quarters.
