Just popping in today for a quick hello and to wish a special gal in the world of blogging a Happy Birthday! Regan Jones, fellow Dietitian and owner of ReganMillerJones, Inc is celebrating her 40th birthday today!
Even though I have never met Regan, she inspires so many of us and has made the world of blogging a small, tight-knit community by co-founding Healthy Aperture and Recipe Redux, two communities that I am a part of and love. I have had the pleasure of working with her on some blogging campaigns through Healthy Aperture and I am so thankful for the opportunities she has provided me with. Regan is one of my role models- she makes her dreams a reality and I want to be more like her!
Gretchen organized a virtual surprise birthday party for her and no party can be complete without fun drinks and some treats. Hopefully I can meet the beloved Regan in 2015!
Today I am sharing one of our favorite on-the-rocks margaritas which is a simple recipe passed along from my sisters-in-law.
Being from Texas, margaritas can be found in just about any restaurant, but it’s always fun to make them at home and save some money.
And you should know I don’t really make fun drinks at home; I usually just stick with wine or beer….however, margaritas are hands-down my favorite adult beverage and these are just perfect, not to mention easy!
I know margarita mix is even easier but you won’t regret the homemade version. And I should mention that growing up in Texas I never ordered on-the-rocks margaritas, because I just loved their frozen ones, but this is an exception because these are fantastic.
I prefer silver tequila, but you can use whatever you like.
In addition to our Texas days, these margaritas remind me of our biennial family reunion to Hawaii- we meet up with my brother’s family and my parents as well. There is no shortage of these babies. I know it’s still winter, but these are good any time of the year.
Chips and salsa optional. 😉

- 2 ounce tequila (I prefer silver)
- 2 Tablespoons freshly squeezed lime juice
- 1 Tablespoons agave
- 2-3 ounces splash of club soda, seltzer or sparking water like Perrier
- Ice
- In a drink mixer add a few pieces of ice, tequila, lime juice and agave. Shake well. Pour the entire content of mixer into a glass over additional ice. Top with club soda or seltzer and fresh lime wedges or slices.

I haven’t had a Margarita in over 15 years (long story but it involves pitchers of margaritas, free-pouring friends, the worst hangover ever, and an 18 mile run 🙂 ). If I ever dared to drink one again, I do actually prefer them on the rocks..this sounds tempting.
