Packed with melted cheese, veggies and spicy jalapenos, you won’t miss the meat in these vegetarian quesadillas.

It’s meals like this where I could easily be a vegetarian. Quesadillas are one of my many favorite Mexican meals, but I’ll never let any of my kids order them at a restaurant. They are far too easy to make at home!
You will love these!
They are easy to customize– add your favorite veggies, heat or no heat and grill them up.
Kid-friendly– of course mine are comping at the bit over veggie quesadillas, but you can easily make bean and cheese quesadallas for them or plain cheese and make them pick out the veggies they will eat.
Meatless- did you know there are benefits to our environment, our health and budget when eating meatless? Try it at least once a week!
I love the tortillas you can cook fresh yourself. If you do find those, it adds an extra step, but gives you a tasty end result.
You can saute the veggies ahead of time and cook the quesadillas when you ready!
This is truly one of my favorite go-to quick-fix meals- betweens beans, vegetables and/or chicken, I could live off quesadillas. Enjoy this version!
- 8 tortillas (corn or flour)
- 2 teaspoons olive oil
- 1⅓ cup onion slices (1 small onion)
- 1⅓ cup red bell pepper slices (1 red bell pepper)
- 1 cup sliced mushrooms
- 2 heaping cup swiss chard (kale or spinach would work too)
- 1 fresh jalapeno sliced (seeds removed if you don't like it too spicy or omit pepper altogether)
- ¼ teaspoon dried oregano
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 1⅓ cup shredded Monterrey jack cheese (Monterrey Pepper Jack would be good too)
- In a large skillet on medium heat, add olive oil. Next add onion, bell peppers, mushrooms and cook for ~6 minutes. Add swiss chard and jalapeno. Season with dried oregano, salt and pepper and cook for ~3 more minutes.
- Divide vegetable mixture among 4 tortillas, top each with ⅓ cup Monterrey jack cheese. Place another tortilla on top.
- Add a drizzle of oil or some cooking spray on a griddle. Cook for two minutes per side or until lightly browned and cheese is melted. Serve with salsa and guacamole.

Quesadillas are made weekly in our house. Breakfast, lunch, dinner – the combinations are endless. I especially love to go the spicy Mexican route. Yum!

I was introduced to those tortillas a few years ago and now I have the hardest time enjoying tortillas that aren’t theirs! The problem is I can’t find them where I live – I actually won a giveaway earlier this year & was sooo happy to get my shipment. I have to see if my Costco has them.

Tried this veggie mix for quesadillas last night. As always Very good! We had left over veggies Greg had some scrambled in eggs and I am eating them just plain in a corn tortilla. Thanks for a great recipe once again.
