Did everyone have a nice long weekend? We went to the beach in Galveston, Texas to visit family and had a great weekend just hanging out. I really miss living close to the water, the beach in particular as I had about 8 years living less than a mile to the beach in California and Hawaii.
I love how you can do nothing, but stare at the waves and let the wind blow in your hair and you feel like you’ve accomplished something. So relaxing. Even with kids there!
I also went on my first run without the kids in close to two months…on the beach and it was heavenly (and kind of hard). Currently I run on the treadmill at home since our neighborhood isn’t great for stroller running and the hubby has long work hours that don’t leave me much solo exercise time. I am grateful I have the option, but I don’t get that great feeling of being able to zone out as I am monitoring kids at my feet.
So back to the beach run, I didn’t have my running shoes with me on vacation so I was forced to go without shoes. I was sure my feet would be killing me and my legs sore from the sand, but I was totally fine the days after. It was the strangest thing- as if I didn’t run at all. So that was a good lesson for me because really doubted that I would be comfortable running barefoot. Sometimes we surprise ourselves.
Ok so…let’s talk food. Avocado toast. Probably one of my favorite breakfasts. It’s almost as popular as peanut butter toast which you tell by scanning instagram food photos. Throw an egg on it and it’s even better!
This quick-fix meal has the perfect combination of foods for a satisfying and healthy breakfast (or dinner for that matter)- use your choice of bread, a whole grain being the best choice, top it with smashed avocado, salt and pepper, a variety of vegetables if you prefer and an egg cooked to your liking.
Remember avocado has the heart-healthy monounsaturated fat and eggs are good for us, packed with nutrients and protein. It’s also the perfect thing to make for dinner when you have nothing planned because these are sort of staple foods (at least in our house). In fact, I am making this tonight as I haven’t had a chance to do our weekly shopping.

I love this breakfast! Avocado toast has become a staple in my diet. I love making “eggs in a whole” with whole wheat or sprouted bread, and egg and then smash an avocado on top! YUM!
