Is Christmas seriously 9 days away!? The time is going by SO fast…there is so much I intended on doing that probably won’t get done. It’s so easy to lose track of the true meaning of Christmas so I have to remind myself that it’s ok if I haven’t crafted, written letters to Santa, bought wrapping paper, etc.
I laugh at the fact that I have my advent calendar full of activities but every day I forget to pull out the piece of paper telling us what that activity is supposed to be. It doesn’t mean I haven’t done any of them, just not on the calendar’s time. We did make Gingerbread houses, Christmas sugar cookies with friends, we have watched Christmas movies together as a family and have read stories about the meaning of Christmas. That should be good enough, right? Sadly, it just never seems to be.
I envisioned all these wonderful Christmas posts, but to be honest with you all….I just don’t have the time right now. I don’t have the time for taking pictures of my food and editing and uploading. I have some things I worked on in previous weeks so I will still be posting, but not how I wanted. Oh well- throwing it out the window. It’s ok.
What I am enjoying are my three precious children, cuddling my sweet baby boy and enjoying lots of time in my cozy, Christmassy home. I just wish this time would slow down!
Why this recipe? Well because it was easy to take a picture of, I like it and I had a couple friends over for a glass of wine and one of them asked for the recipe. So here it is! There are a million variations on this party mix- some sweet, some spicy, some salty. I like this one that is more traditional- not too much spice, salt, this, that or the other. Simple. If you want it to have a more pronounced bbq flavor, just add more of the bbq sauce (imagine that!)! It really hits the spot when you have the munchies or goes perfect with a beer or glass of wine. Adjust the seasonings to your liking!

Barbecue Snack Mix
INGREDIENTS:
2 cups corn chex
2 cups wheat chex
1 cup pretzels
1 cup cheese-flavored crackers
1 cup dry roasted peanuts
3 Tablespoons butter, cubed
2 1/2 Tablespoons barbecue sauce
1 1/2 teaspoons Worcestershire sauce
1/2 teaspoon seasoned salt (I use low sodium Lawry’s)
DIRECTIONS:
1. Set oven to 250 degrees. In a large cookie sheet or roasting pan, combine all 5 dry ingredients (Chex cereal through peanuts). Set aside.
2. Melt butter in saucepan or microwave. Stir in BBQ sauce, worcestershire sauce and seasoned salt. Pour butter mixture onto cereal mixture and stir to coat. Bake in oven for 1 hour, stirring every 15 minutes. Remove from oven and let cool completely. Store in an airtight containers.
COOK’S NOTES: This can easily be doubled if needed. You could make this gluten-free by using a mixture of corn and rice chex, nuts and gluten-free pretzels. You can’t mess it up.
