I finally had a date with my 2015 planner, long overdue…and as I was filling it in I realized we are already a quarter into the new year! With that discovery, I briefly flipped out, then did a quick overview of what my first 3 months of the year looked like. I thought it would be a good time to check in with you guys to see how everyone is doing with your New Year’s Resolutions.
I had to go back to my blog post and see what all my goals were (now I am thinking I should just print it out).
Ok so here is my update: I have definitely increased my workouts. I am back to doing my favorite Beach body Insanity and P90X workouts a couple times a week and have been running at least 3 times a week, upping my weekly mileage, so I feel good about that. I also started the new year doing a lot more yoga which was one of my goals, but have been slacking lately so need to get back to that. I have listened to bible readings on podcasts as planned, although I do admit to forgetting at times.
Another one of my goals was to pack lunches at night as opposed to leaving it until morning which was making me super stressed and rushed. We’ve been great about doing this and my oldest son and daughter have been helping so this is going much smoother. I have been meal planning a little more too so I can say I feel good about those two goals too.
Overall, I know that I am not going to be perfect with everything…with that being said there are a few goals left that I haven’t touched yet, but I am I am happy with my progress so far.

So today’s post is a super simple recipe that I have been whipping up for breakfast a lot lately.
You all know “eggs in a hole” right? Where you cut a hole out of a piece of bread and cook the egg in the middle of it? It goes by other names…. eggs in a nest, eggs in a basket or toad in a hole are some other common ones. Well I thought I’d do a spin-off using spinach instead of bread.
I just placed my spinach around the edge of a small pan and fried the egg right in the middle, as the spinach started to cook I moved it closer to the eggs so it would stick. Then when the egg looked well cooked on one side, I flipped the whole thing and cooked it on the other side. The spinach sticks to the egg and it makes a nice frame around it. Then I topped it with Sriracha sauce and devoured. So easy and yummy! And healthy. Oh and I used my ghee from this post but you can use any oil or regular butter as a substitute.
If you don’t like Sriracha you could just use whatever hot sauce or salsa you like.
I am slowly starting to like runny eggs! I still prefer my yolk to be more cooked through, but the runny egg does go nicely with the sautéed spinach and Sriracha sauce.
So next time you need a low carb, gluten free breakfast, make these cute little eggs in a spinach nest!

- Per Egg Patty:
- ¼ teaspoon ghee
- 2 cup fresh baby spinach
- 1 egg
- salt and pepper
- Sriracha
- Heat a small skillet over medium heat, add ghee or other oil. Add 2 cups of baby spinach to the pan, leaving the center open for the egg. Crack an egg in the middle of the spinach. Using tongs gently move spinach around as it cooks, gently pushing it toward the egg as it cooks. Season with salt and pepper. After 1½ to 2 minutes use a spatula to flip over the egg and spinach, the spinach should be stuck around the edges of the egg. Cook egg for another 1½ to 2 minutes depending on how you like your yolk. Season with any additional salt or pepper if needed. Remove to plate. Wipe skillet clean and repeat if desired. Top egg patties with Sriracha sauce.
