As I write this, I am getting giddy with the thought of the holidays. Year after year they fly by too quickly as we become consumed with shopping, crafting, working, trying to do it all, but I am really working on savoring the moment.
When thinking about past years, the best part of the holidays to me are the simple ones- spending Thanksgiving with family, unwrapping our Christmas ornaments, baking special treats and favorite dishes, putting up the tree with the kids, driving around to see the Christmas lights. Those are truly the memories that stand out the most.
Food plays such a big role during the holidays. I know there are certain ones that I only eat during this time of year so they provide us with such great memories.
My kids love to reminisce about their favorite holiday foods so I thought I’d share what we have to have on our table. Of course turkey, mashed potatoes and stuffing will also make an appearance but also….
Fun Appetizers- I love making things I don’t make year round. These stuffed mushrooms are the perfect pre-meal snack and the proscuitto wrapped asparagus are simple yet elegant. Bottom line, there has to be a couple of special appetizers consumed the holidays.
Roasted Vegetables– well there has to be a vegetable dish and many like the green bean casserole, but I am roasted veggie kind of girl so these will probably be making an appearance again.
Pumpkin pie– an absolute favorite. Anyone can follow the directions on the pumpkin pie filling can it will turn out pretty good, but this vegan pumpkin pie is a great choice for those who have certain intolerances.
Rice casserole– my son only requests the traditional broccoli cheese casserole around the holidays, but this rice gratin is an updated healthier version that the adults might prefer.
Cookies– baking cookies are a must during the holidays. We love these molasses cookies because the holidays = fun flavors like molasses!
Nog and hot cocoa– two must-haves during the holidays. And I’ll let you in on a little secret. I have always been grossed out by egg nog because 1) I don’t drink milk and 2) eggs in milk, um no thanks.
