I am on vacation visiting my family in Texas and I’ve left my husband to fend for himself for over 2 weeks. Terrible, right? Just kidding, I couldn’t do that. I have to admit, when we got married almost 8 yeas ago I could not wait to cook for him and later our growing family. He was never a big cook anyway. I know he managed to feed himself when he was single, but he happily sat back and let me take over my housewife title, including cooking well-balanced dinners every night.
When he realized I was going to be gone for so long, he said “what am I going to eat”?! Then he jokingly blamed me for giving him no control in the kitchen. Oh well! I didn’t have a lot of time, but I prepped him on the easy things he could make himself and I made and froze a couple meals for him so he should be set.
This meal plan is for you babe! (My meal plan is up in the air since my parents will be doing a lot of cooking and I’ll be eating out more).

I am going to try to remember to take photos of all the yummy food I eat here. San Antonio and Austin have some great restaurants (where I’ll be splitting my time).
Speaking of food and Texas, anyone see the Top Chef finale?!

This week we will have Paleo meatballs, chicken wings with chimichurri sauce, stir fry, brinner (breakfast for dinner). Not sure in what order, but it will all get eaten at some point this week. Made the frittatas this morning so we can have those for breakfast, topped with fresh salsa! My favorite!

Here is our meal plan for the week.
Sun– Swedish pancakes and fresh berries
Mon– asparagus and leek risotto with either a green salad or fruit
Tues– sauted spinach and mushroom maybe with white beans over quinoa maybe something for the kids
Wed– Britt is making her black bean and sweet potato tacos
Thurs– grilled chicken with pesto pasta and salad
Fri– pizza night
Sat– new years noodle soup this is an amazing vegan soup loaded with spinach onions chick peas lentils and pinto beans. This is actually a soup one of my sons requested. It is so good!
Also Melanie if your schedule ever allows when you are here I would love to meet you sometime when you are in town for a visit.
