I am sitting here wondering what I should write about and I am coming up short, which is funny because I’ve had food on the brain a lot lately. The minute we had these fall-like temperatures, I couldn’t help but think of food….soups, warm baked bread, the Holidays! Then there is my son’s birthday next month (more food), the birth of our third child coming in the next 7 to 8 weeks so I am wondering how I’ll fit it all in.
Now I have so many things I want to cook, that I don’t know where to start. One day it seems like it will be soup weather and the next day it’s a perfect day for grilling. My head is all over the place with the baby’s due date approaching, the “to do” list getting longer and I don’t know what I want to share with you guys! So here is a family picture instead of food- you all know I rarely do that! It was my 4 year olds very first soccer game this weekend and it was so fun for everyone.
I guess that means this will be a short post with my tentative plan for the week. I promise to have some goodies to share later this week. Please tell me….what are you having this week?!

Spinach Feta Quiche, Sauteed cherry tomatoes with garlic and herbs

Leftovers
Friday
St. Louis- the kids and I are driving out to meet up with my mom and Grandma!

How is your black bean burger recipe? We loved them but they did not hold together well b/c of no egg. I may try a flax seed and water mixture.
Sunday: hubs and I are going on a date to get Indian Food right now!
Monday: Your crockpot beans, vegan, with cilantro lime rice (do you have a recipe for this? I may just make brown rice and then toss in a blended mixture of lime juice, salt, and chopped cilantro?) with guac and salsa and cheese (For Hokensons, too)
Tuesday: Cauliflower soup (grilled cheese for kids and Luck is traveling)
Wed: Leftovers
Thurs:Luck still traveling, so grilled pb and j for the kids (their favorite)
Fri: Baked potatoes with the fixin’s (vegan “cheese” for me made from cashews and nutritional yeast)
Sat: Sweet potato gnocchi with maple scented kale (didn’t make last week)

Hey Britt- never made the burgers so we’ll see! I’ll be sure to let you know. I can’t decide if I want to skillet cook ’em or bake them. I might try one of each. Have a good week!!

So I am struggling with meal planning lately with our five out of seven night of the week evening plans. My go tos of salad, chulupas, and burritos are getting old.
Sun–we had a first Sunday of football party so Greg and I grazed all afternoon so we will probably have cereal and/or popcorn. The kids of course played more then they ate so they had chicken nuggets or pizza, watermelon, and carrots
Mon–Britt’s burrito bowls
Tuesday–I don’t know maybe leftovers, maybe pancakes struggling with this one
Wed–Salad bar
Thurs–again I am clueless maybe chicken soup I made a while ago and froze with grilled cheese and frut.
Fri–Pork tacos this meal has been push back for two weeks and will be made this week
Saturday–I might search for a crock pot recipe of some sort again clueless.

Hey Gretchen- I feel ya. Sometimes you just have weeks where you feel uninspired or don’t want to think much about it. Those times it’s ok to rely on simple stuff. Whatever the case, give yourself a break. The motivation will come back.

I was thinking i would not post this week because i was feeling very uninspired, but i looks like we are all in the same boat. our afternoons and evenings are starting to get full with the kids activities as well. i guess we all get a pat on the back for making simple stuff at home and not going out or getting fast food.
Monday- crock pot chicken and dumplings (new recipe, i hope it turns out)
Tuesday- leftovers ( i made flank steak on Sunday)
Wednesday- Turkey Sliders -leftover from the freezer
Thursday- ?? maybe use leftover brisket from freezer to make tacos
Friday- Eggplant Parmesan -i have been craving it-

ps–My only idea–since weather is still SO hot here (100-98) is that I made a really great egg salad that we’ve been enjoying. Very simple–chopped eggs (6 egss), chopped green onion, dash of curry, tsp of dijon mustard and mayo (one Tbsp the real stuff, 2T lowfat) I really yummy on whole grain or rye bread or just crackers. Will be nice to start cooking soups and stews again, whenever it cools off here!!!
