This tasty and nourishing Mixed Green Salad with Strawberry, Apple and Herb Dressing is great on it’s own or with your next grill session.
Post vacation calls for good, healthy, whole foods. Well, and some Mexican food because I am an “all in moderation” girl. This salad hit the spot. I came back from vacation to a growth spurt of my basil and mint so they were the inspiration behind this herb dressing and fruit salad.
I would have to say basil and mint are two of my favorite herbs….and cilantro. Ok, I don’t think I could narrow it down to one!
This herb dressing takes minutes to whip up in a blender with basic pantry ingredients, plus the fresh herbs.
If you think kale is a food trend that is going to go away, think again. It’s so good for you! Packed with antioxidants, fiber, potassium and Vitamins A, C and K, there is no reason for it to go away! It’s even got 3 grams of protein in a cup! Since it can be a little tough, combining it with some romaine makes it a little easier to enjoy for some people.
Also, fruit in salad only works for me if there is a tangy cheese like goat cheese and a little bitterness from something like onion. Let me tell you, it’s a great match. The pumpkin seeds add a little extra crunch, plus fiber and heart healthy unsaturated fats.
I just love a good salad in the summer and this will go with any of your grilled menu items. In fact, some grilled chicken or shrimp would be awesome in this!

Items used in making this recipe:
- For the dressing:
- ½ cup fresh basil leaves
- ¼ cup fresh mint leaves
- 2 teaspoons Dijon mustard
- 4 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, cut into chunks
- ¼ teaspoon salt
- For the salad:
- 3 cups chopped romaine
- 3 cups chopped kale
- ½ cup diced grape tomatoes
- ½ cup chopped strawberries
- ½ cup diced apple
- 3 tablespoons pumpkin seeds
- 1½ tablespoons goat cheese
- ¼ cup sliced onion
- Mix lettuces and tomatoes in a bowl. Toss with dressing. Top the strawberries, apples, onion and goat cheese. Sprinkle pumpkin seeds all over the top.
