When I first started getting into blogging I read a ton of craft and sewing blogs. In fact, the only food blog I read was the Pioneer Woman. I guess I was in denial that there would be competition when it came to food blogging. I guess I thought I was one of the first who thought of it. Ha.
One of my favorite craft blogs at the time had a dutch oven bread recipe, and I don’t even remember what blog it was, which was the first time I had ever seen this and that was about 6 years ago. Now there are a million dutch oven bread recipes out there, but I had never tried one until last week.
Bread like this, made with regular ol’ white flour, isn’t exactly a power food, but I am totally ok with everything in moderation. We don’t really eat bread other than for sandwiches or maybe at an Italian restaurant, but it was totally worth the experiment. If you don’t have a bread machine, like me, and want artisan bread, consider this a splurge-worthy recipe. It tastes JUST like you bought it fresh from the bakery.
The key is letting your dutch oven heat up as the oven preheats.
You’ve got this super soft blob of dough that you have made the night before that you just plop into the dutch oven, put the lid on and 30+ minutes later….
here’s a sneak peak- I baked it for 30 minutes with the lid on, then took the lid off and let it brown for the last 10 minutes
Amazing! The hot pot causes those little steam pockets in the bread resulting in those little holes throughout- so good! It’s got the perfect crusty exterior, yet light texture.
Keep in mind you can leave this plain, add other herbs, garlic or what ever flavor you like. Rosemary bread has always been one of my favorites.
I don’t see myself making this a lot because I try not to eat a lot of bread….BUT it’s homemade from your oven and if you are going to splurge on a artisan bread, try making it at home for a fraction of the cost!

- 3 cups all-purpose flour
- ½ teaspoon active dry yeast
- 1¾ teaspoon sea salt
- 1½ cups warm water
- 1-2 Tablespoon minced fresh rosemary (feel free to omit if you don't have or sub another favorite herb)
- Combine flour, yeast, salt and rosemary in a large bowl. Stir in the warm water and stir until combined using a spoon or spatula. It's okay if the mixture looks a little shaggy. Cover with a towel or plastic wrap and let dough sit on the counter overnight, or for at least 12 hours.
- When ready to make the bread, place a dutch oven in the oven at 450 degrees for 30 minutes. While dutch oven is heating up, transfer dough to a floured surface, it will be bubbly and sticky. Add a little flour and gently fold and tuck it into a round ball (it will still be a pretty loose dough). Using oven mitts, carefully take hot pot out of the oven, add a teaspoon of olive oil to the dutch oven and drop the ball of dough into the hot pot. Cover with the lid and place back into the oven to bake for 30 minutes. Remove lid and let it bake another 10-15 minutes or until brown.

Melanie: Cannot believe that I have been doing this bread now in different ways for the past 2 weeks. Each week I do several loafs and take o quilting for taste testing. Like the combination of 2 C white fl and 1 C whole wheat pastry flour with flax seeds and/or sunflower seeds the best so far.

That is one gorgeous loaf of bread, nice photography, too. I haven’t made bread for a while, used to make it for one of my sons (who is now at college). A local bakery makes Rosemary Diamante, rosemary bread with a sprinkling of coarse salt on top, it is fabulous and one of my favorites.
