Hi friends,
Just popping my head in quickly to share our Easter plans with you in case you are in need of some inspiration.
This year we are spending Easter with friends and decided on doing a brunch instead of a big dinner. Thankfully we have good friends that fill in for family when we are apart. Our kids are similar in ages so it’s like one big happy playdate. Although I don’t have an exact menu yet, here is the general plan.
We come home from church, we do an egg hunt in the back yard for the kids and have a relaxed day of celebration. I like to have a couple of snack items, an egg dish, a meat, a vegetable or two, fruit and some sort of bread item like muffins or a coffeecake.
What I love about brunch is you can make a lot of it ahead of time- for example fruit salad can be assembled, muffins baked (even frozen if you want to do those earlier in the week), cheese and vegetable platters organized the night before. The only thing I will actively cook on Easter will be the quiche and then I’ll pop the ham in the oven. I love doing prep work in advance!

Deviled Eggs
Shrimp Cocktail
Cheese Platter
Spiral Ham
Egg Frittatas or Quiche
Muffins or Quick Bread
A Vegetable and/or Salad
Fruit Salad or Fruit Kebobs
Mimosas and Coffee

And I love that a lot of the brunch items don’t require recipes like a nice fruit salad, shrimp cocktail and spiral ham.
Another bonus of brunch gatherings is that you don’t really need a dessert, but can get by with muffins or a quick bread. Not that I have anything against dessert, but after snitching the kids chocolate and jelly beans, I don’t need it!

We’ve never had a big Easter feast in my family. Although one memorable thing is my Grandma’s Easter bunny cake she made every year! Two cake rounds. One would be the face and the other would be cut in half and split to make ears!
