I found a can of coke in my fridge from when we had company and decided it was going to be put to good use. This grilled chicken was really yummy with this sweet and tangy homemade BBQ sauce smothered on top. If you want the recipe, I posted it over at Our World Family.
We got a dinner and three lunches out of this- it’s even good cold!
I know it’s a Holiday weekend, but have you thought about what you’ll be cooking this week? Grab a pen, a couple cookbooks, magazine or get online and start jotting down some ideas. It will make your life so much easier, I promise. And don’t worry if you don’t stick to it 100%. In fact my week took a totally different turn, but at least I have some ideas for the upcoming weeks.

Hamburgers on the Grill, Grilled Potatoes, Caesar Salad with Homemade Dressing
Tuesday
Cold Dinner night- Chicken Salad, Mixed Greens, Hummus & Pita, Fruit (soccer night)
Wednesday
Fish in Green Curry (trying to improve this dish), Jasmine Rice
Thursday
Tomato, Basil, Mozzarella Sandwiches, Fruit (soccer night)

I am such a groupie….but I so look forward to getting my meals written somewhere and it really makes me stick to it!
Sunday: make pizza night
Monday: Sweet potato gnocchi with maple scented kale (Have you ever made sweet potato gnocchi?? I have no idea if we will like them or if I should serve them with a sauce)
Tuesday: GF Spaghetti with marinara and broccoli
Wednesday: Sweet Gretchen is making some sort of enchilada dish
Thursday: Left overs or breakfast for dinner
Friday: this Mama wants to go OUT!

LOL- I am glad your a groupie because it’s more fun for me too. I love the sound of sweet potato gnocchi but have never made it. You must let me know how it turns out!

Monday- turkey burgers, brocolli salad, salad with watermelon, arugala, purple onoin & feta
Tuesday- going to try carnitas in the crock pot, will use it to make burrito bowls like Chipotle
Wednesday- steak, sweet potato fries, roasted asparagus
Thursday- leftover carnitas
Friday- homemade pizza, going to try putting grown ups toppings on portabellos for a low carb option, ceasar salad
Saturday- Date Night!
Sunday – Flank Steak, cauliflower mashers, sauteed spinach

Here is what we are eating this week. I apparently am really craving Mexican food (no reason for it, but we have a heavy mexican menu)
Sunday–Panini with a Hami melon, never heard of them before saw them at HEB and thought we would try them. It is similar to a cantalope.
Monday–doing a big chicken fajita lunch at my MIL for her birthday I am making the chicken fajitas, veggies, and your clianto lime slaw. We will probably have left overs for dinner
Tuesday–Pork tacos didn’t make them for Greg’s birthday, we realized we had football pictures at 6 and then a family memeber took us out instead:)
Wednesday–Hatch chili chicken enchilada pie with cilantro lime rice, black beans, at fruit. I will making sauted veggies for Brittany
Thursday–BBQ chicken salad with a cilantro lime BBQ dressing I have left over bbq chicken from another meal. This is a new recipe so we will see what we think.
Friday–Homemade pizza
Saturday–left overs or if those are skimpy then I am going to try a beef taco recipe in the crock pot.
