There are lots of great products to try and as promised, today I will share the recipe for the delicious pancakes using Bob’s Coconut flour (one of the items in the giveaway pack). I can’t believe I have never experimented with coconut flour, but boy am I in love! The recipe only uses 1/3 cup of it, yet I was shocked at how the coconut really stands out. Since I don’t have a problem with gluten I substituted white whole wheat flour for the rice flour. The first thing out of the kids mouths after taking a bite “Mmmmmm!!”
Coconut flour is great for gluten free baking. It is very high in fiber, lower in carbohydrates and provides a rich flavor and texture to baked goods. You can replace up to 20% of the flour in any recipe with coconut flour, as well as adding an additional amount of liquid because coconut flour is very absorbent (therefore will be a much thicker batter if you don’t add a little extra liquid).
I wonder if this would be as good using the vegan pancake recipe? It’s worth a try for the coconutty flavor is heavenly. Make sure to read the cook’s notes on how to make these gluten free.
There is also a gluten free vanilla almond sugar cookie recipe on the package which is probably amazing. I hope if you don’t win the giveaway, you make sure to buys some of this delicious flour!

Buttermilk Pancakes with Coconut Flour
INGREDIENTS:
1 cup white whole wheat flour
1/3 cup coconut flour
1 Tablespoon baking powder
1 Tablespoon sugar
2 Tablespoons oil
2 eggs
1 1/2 cups low fat buttermilk
Few splash of regular milk (~1/4 cup)
DIRECTIONS:
1. Mix dry ingredients in a medium bowl.
2. Add oil, eggs and buttermilk blending with a whisk until just blended. Add a few splashes of regular milk to thin it out (batter will still be thicker than normal even after adding extra milk).
3. Pour pancake batter onto a hot griddle sprayed with cooking spray. Cook until bubbles have formed and underside is nicely browned. flip and brown other side.
COOK’S NOTES: The batter will be thicker than regular pancake batter but that is ok, they will cook up perfect and fluffy. To make gluten free: substitute rice flour for the wheat flour, add 2 Tablespoons potato starch (this was original recipe from the package)

Keep up with the meal planning. I enjoy it. It helps me to stay accountable to actually plan. The Pancakes look great. We love Bobs red mill products. I need to enter the give away! Our plans are interesting because I have no oven. Ours broke early in the summer we are going to get a gas range. We have the range waiting for the plumber to plumb for gas. My fingers are crossed for this weekend. My one son also begins football which consumes our free time until November. So here are our plans.
Sun- pasta with sauted spinach meat sauce from the freezer for Greg and the kids, fabulous vegan pesto for me
Mon- potato and chive pancakes might make them in the waffle maker ( saw it on pinterest) and broccoli
Tues- britt’s week do she is making pad Thai and a slaw
Wed- crock pot black beans and rice for burrito bowls
Thurs- scrambled eggs and fruit for the kids and tofu scramble for me.
Fri-either burrittos or quesadillas with the left over beans
Sat- pizza if the oven works, otherwise crack pot baked potatoes

Well I am glad it helps. I know when I don’t do it, our meals are all over the place…and I definitely spend more money as a result. Good luck with your oven! I am sure you are eager to have it but it must have been a nice break from having to turn it on in the hot summer! Enjoy your “crack” pot baked potatoes. He he…that made me smile 😉

I love your meal planning! It is so helpful for me to see what others are planning and get new ideas. I also can’t wait to try the pancake recipe! I am just starting to experiment with “other” flours (coconut, almond, rice, etc…) and get out of my whole wheat flour only comfort zone.

You know I’m a big fan!
This week, we are tightening the budget belt. So I am trying to stick to eating what we have and buying less expensive foods.
Sunday: Squash and potato hash browns , roasted broccoli, fresh fruit, and I juiced oranges.
Monday: Roasted sweet potatoes with your chimichurri (SO GOOD!), green beans from our produce co-op, and fresh fruit.*our sweet potatoes were bad even though purchased yesterday. they looked like squash on the inside. so odd. I still roasted them but we had to throw them out with stunk bc that was our main part of our meal. I made quinoa and we made do. But now I have extra of your chimichurri!!! YUM!*
Tuesday: Pad Thai (made with gf soy sauce and no egg)with Asian slaw (modifying with scant amount of oil and sugar and adding crucifers in the form of broccoli slaw) for us and Hokensons.
Wednesday: Vegan quesadillas (bean and cheese for kiddos) with slaw for me.
Thursday: Salad bar and leftovers
Friday: Pizza night!

Glad you liked it! We ate it for several nights over grilled chicken and veggies. It makes everything a little fancier. 😉 Weird about the sweet potatoes, but glad you were able to still enjoy the sauce.
