This Chicken Chili is one of the easiest slow cooker dinners that tastes like you worked hard to make. High in protein and naturally gluten free!
Chicken chili made by dumping ingredients in a slow cooker and walking away for about 6 hours. Anyone else want in on that action?!
It’s one of the handful or meals that my entire family will eat. I typically serve it with all the yummy toppings, tortilla chips and/or some basic cheese quesadillas.
Slow cooker recipes are always a welcome addition to any time of the year, but when the weather is cool especially this is a big hit.
This effortless dinner will definitely make it on your meal rotation. There isn’t much you can do to mess it up!
You simply add all the ingredients to the slow cooker, cover and let it cook on low for 6 hours, then you’ll remove the chicken and it will be so tender that you can literally touch it with a fork and it will fall apart.
Once you shred it, add it back into the chili and keep it on warm until you’re ready to eat.
You seriously can’t beat having a hot meal by doing nothing at all. This recipe calls a few fresh items, a couple canned items and one frozen ingredient so this is the perfect meal for someone who has a well stocked pantry, but little time for prep work.
I make sure to use a few low sodium items to keep the overall salt content down.
Serve it with cornbread, tortillas or quesadillas!

What’s your favorite crock pot recipe?
- 1 small onion, diced
- 1 (14.5 ounce) can diced tomatoes, slightly drained
- 1 (14.5 ounce) can diced tomatoes with green chili, slightly drained
- 1 (15 ounce) can black beans, low sodium, drained and rinsed
- 1 (15 ounce) can chili beans, drained slightly
- 1 cup water
- 1 cup frozen corn
- ½ teaspoon cumin
- ¼ teaspoon chipotle chili powder
- ½ package taco seasoning (see notes)
- 1.5 lb thinly sliced chicken breasts
- Toppings: shredded cheese, avocado, chopped cilantro, sour cream, pico de gallo
- Mix all ingredients in slow cooker (onion through taco seasoning). Place chicken breasts on top, covering slightly with chili mixture.
- Cook for 6 hours on low. Remove chicken breasts, shred (they should shred very easily). Add chicken back to slow cooker and keep chili on warm setting until ready to serve. Ladle into bowls and serve with cheese, avocado, pico de gallo, sour cream and/or cilantro.
Always compare brands/types of food to find the lower sodium option. Even within the same brand there can be differences depending on style. Taste and adjust seasoning as needed.

I am so glad you liked it. I just realized I never responded to this- so sorry! Due to the time-consuming nature of entering in recipes for nutrient analysis, I don’t have the calorie info. There are several recipe analysis programs free online you can look at if you want to do it yourself. Just enter in every single ingredient with amounts used and make sure to divide by the number of the servings you got out of the chili (or the amount stated in the recipe). There are several out there- just google “recipe analysis”…Calorie Count & Fit Watch are two I’ve played with recently. Thanks for visiting the blog and letting me know how the chili turned out! Just made this tonight. Very yummy, good flavors and simple. I did find mine had too much water in it even after 8 hrs of cooking. Made for more of a stew rather than a chili. Still good but I would probably go for half the amount of water next time. Thanks!
