Hello friends!
Hope you are enjoying a the end to a lovely month of October. Who’s ready for Halloween? We are! Costumes have been purchased- an evil jester (my oldest of course), the Hulk (or a Transformer- still deciding), witches all around for the girls in the house. We got our few decorations up. It’s a good thing I am ready because the town I live in changed trick-or-treating to tonight due to expected rain on Saturday. I guess it’s a small town thing that they can actually just DO that, but I think it’s just crazy.
I am proud of myself for not doing any treat buying yet. I am waiting until the last minute (today) so I am not tempted to eat all the candy I am supposed to be passing out. I also have leftover Halloween pretzel bags and the juice gummies (which are basically like candy but with vitamin C) from my sons’ birthday party, so I will add those to the candy mix.
Speaking of sweets, I love to make treats with the kids during the holidays, but here at their new school they have all the festivities all the time so I feel like they take care of that. For example, today is their fall festival which will be packed with goodies, candy, chips, soda. Yes, they offer soda for sale during their festivals. Not a fan. Anyway, I guess they need the Dietitian mom to step in and give her opinion. They will hate me for sure. 😉
But enough of that, today I am sharing my new pumpkin pancake recipe that I created for my friends at FitFluential. I experimented with a variety of flours- like quinoa, oat and brown rice because I love the added nutrition they provide. I truly feel guilt-free when I eat them so you can make a batch over your meal prep during the weekend and enjoy them throughout the week.

I like the GF flour combination. I actually like the taste of GF flour more than wheat flour. I mean, a combination of quinoa, oats and brown rice gotta taste pretty wholesome, right? 🙂
